Cookies in the cave?

If you’ve ever been on our Legendary Black Water Rafting Black Abyss adventure, or passed through our the Long Black Cafe, you’ll probably know all about our world-famous (in Waitomo) Cave Cookies.

 

Originally based on the Anzac biscuit our Cave Cookie has since morphed into more of a slice than a cookie . It still has the same sweet, chewy oaty goodness which keeps many a cave explorer fuelled during their time underground.

 

While they definitely taste best after three hours of cave tubing, you don’t need to be deep underground to try this delicious treat.  Quick and easy to make, recreate these at home and enjoy with a hot cup of tea!


Cave Cookie Recipe

Ingredients

250g butter, melted
3 cups quick-cooking oats
2 cups desiccated coconut
1 cup brown sugar
1 tablespoon golden syrup

Optional extras
½ cup chocolate chips
or ½ cup dried fruit e.g. raisins

Directions

Mix melted butter into the dry ingredients.

Line and  grease a 20 x 30cm slice tin.

  • Press mixture in firmly, ensure it is evenly spread.

Bake for approx 25 minutes at 170c or until golden brown.
